For years we’ve been told that processed and/or cured meats increase our risk of cancer. I decided to delve into the research and the common-sense of this issue and see what I could fine. You will be surprised at how strong one is, and how weak the other. Nitrates and Nitrite containing salts have been used to cure meats for thousands of years, but only since the 1970’s have we been told that these natural ions cause cancer.
Can you enjoy your bacon, or should you avoid nitrate/nitrite due to the cancer risk? It took me a couple months to cut through all of the emotion, blustering, and “expert opinion” on this issue and find out what the research actually shows.
